Potato Convention topics focused on industry directions

After a first day abundant in knowledgeable talks on current and future matters of the processing sector, the International Potato Processing and Storage Convention continued in Bucharest on Thursday, June 18 with its second part dedicated to general topics of interest to the industry. Day 2 commenced with a sharp presentation held by Joe Sowokinos, Professor Emeritus at the University of Minnesota, discussing the topic of maintaining the long term processing quality of potatoes, going through the different stages of chemical maturity monitoring. He spoke of the pivotal role played by sucrose in the growth of a potato and how sucrose monitoring in storage can be used to maintain processing quality. More
