Paul Fossum and others growing potatoes for the table stock market keep a constant vigil over the crop from the time it’s seeded until harvest time. And the constant watch continues once that harvested potato crop is delivered to the plant that washes the crop and then stores them until they are shipped to the end consumer. A prime example of this was apparent on the day Fossum’s potatoes were being brought into the Nokota Packers, Inc. facility in Buxton.
