In Peru, potatoes are a product with high potential; however, not enough efforts have been made to allow the growers to receive a higher price for their productions.
In this regard, the executive director of the Center for Productive Innovation and Technology Transfer for Potatoes and other Andean Crops (CITE Papa), Celfia Obregón Ramírez, said that the biggest challenge with this food is to give it added value and process it, as well as becoming competitive in the market.
Regarding processing, she said that the goal is for producers to form (or join) organizations, so that they can access the market with their potatoes in better conditions. She explained that selecting the potato, washing it and packing it inside a mesh adds value to the tuber.
