The U.S. Department of Agriculture opened a public comment period on Saturday as they consider whether or not to approve a genetically modified potato that has a number of attractive characteristics. The potato in question was developed by J.R. Simplot Company. It was engineered to be resistant to late blight, and has reduced black spot bruising, says the USDA. It also does not turn as dark when fried and has lower sugar levels. One more attractive characteristic of the engineered potato is lower acrylamide potential. The comment period is open for 30 days.
