Data shows white potatoes boost fibre intake

A new data analysis conducted by the U.S.-based Alliance for Potato Research and Education shows that white potato consumption is positively associated with the intake of dietary fibre among children and adults. “There is a perception that the dietary fibre in the potato is only in the skin,” said Maureen Storey, president and CEO of APRE, at a recent dietary fibre symposium held in Bethesda, Md. “Not true. Although the skin is an excellent source of dietary fibre, it is also found in the flesh of the potato, which is a good source by itself.” See spudsmart.com for more.
