A new data analysis conducted by the U.S.-based Alliance for Potato Research and Education shows that white potato consumption is positively associated with the intake of dietary fibre among children and adults. “There is a perception that the dietary fibre in the potato is only in the skin,” said Maureen Storey, president and CEO of APRE, at a recent dietary fibre symposium held in Bethesda, Md. “Not true.
